This is based on a recipe I found on Facebook. But that recipe had less oats and I wasn’t a big fan of the “eggy” taste it had. So I’ve added more oats – and it’s delicious! Plus so easy to make and you’re getting some fruit, yoghurt (packed with protein) and oats (loaded with fibre) into your day.


  • 1 banana medium, ripe
  • 1 egg
  • 1/3 cup rolled oats

Choose the ripeness of banana that suits you – just bear in mind a slightly green banana isn’t going to mash well and you’ll end up with an unpleasantly lumpy pancake.

Step by Step Instructions

Step 1

Mash up the banana in a bowl.

Step 2

Then add the egg and mix, and finally add the rolled oats and mix again.

Step 3

Heat a little butter or margarine in a frying pan on medium-low heat. Add heaped spoonfuls of the mixture to the pan. Flip the pancakes when the edges start to bubble and they’re light brown underneath.

Step 4

Serve with a smear of butter, chopped fruit, maple syrup or whatever your heart desires!
