Haloumi-Chickpea Salad

One of my summer favourites – the highlight of this salad is definitely the squeaky cheese (aka Haloumi)!

A deliciously fresh salad that is so easy to make – just literally throwing together some ingredients with minimally chopping and dicing. This salad is a fantastic way to incorporate more legumes in your life – thanks to the chickpeas that are packed with fibre and nutrients.

Ingredients

  • 1 x 450g bag of Broccoslaw
  • 100g baby rocket leaves
  • 300g green beans
  • 400g tin of chickpeas, rinsed and drained
  • 1 x 180g pack of Haloumi cheese, sliced
  • 3-4 tbsp mayonnaise

Notes about the ingredients:

  1. If you don’t like, or can’t find, Broccoslaw then just use any other type of undressed coleslaw you can find.
  2. Slice the Haloumi into pieces around 5-8mm thick.
  3. Haloumi tends to suddenly brown up, so check it regularly while cooking.

Step by Step Instructions

Step 1

Rinse vegetables and chickpeas in fresh water and drain. Trim ends off green beans.

Step 2

Toss the Broccoslaw dressing sachet through the Broccoslaw.

Step 3

Toss the green beans, rocket and chickpeas through the Broccoslaw until all are well covered with dressing (add further 3-4 tbsp mayonnaise if required).

Step 4

Heat a frying pan on a low heat, add a splash of oil and gently fry haloumi slices until golden brown. Remove from heat and drain on paper towel.

Step 5

Add crispy haloumi to salad and serve.
