I had enjoyed these muffins, made by my friend Sandra, many times before I finally asked her for the recipe. Thank goodness she said yes! Because these are so quick and easy to make, and they’re delicious!
You can either use fresh apples, peeled and cooked in their filling. Or if you’re looking for a quick muffin (like me), then grab a tin of apple filling from the supermarket – sorted.

Ingredients
- 1 3/4 cups of self-raising flour
- 110g butter, melted
- 1 egg
- 1 cup stewed apples (or tinned apples)
- 1 cup sultanas
- 3/4 cup sugar
- 3 tsp allspice
- 1 tsp baking soda
If you like a crunchy topping on your muffins, then combine 1 tbsp caster sugar, with 1 tsp cinnamon, and sprinkle on top of the batter before baking in the oven – delish!
Step by Step Instructions
Step 1
Mix together all dry ingredients in a bowl

Mix wet ingredients together in a separate bowl
Step 3
Fold wet ingredients into dry ingredients and gently combine until wet and light, about 95% mixed.
Step 4
Spoon the batter into cupcake cases in a muffin tray. Sprinkle with a mixture of sugar/cinnamon if desired
Step 5
Bake at 200 degrees Celsius for 10-15 minutes. Then rest for 5 minutes before turning out of the muffin tray and enjoy!
